Ingredients
  

  • 1 tsp olive oil cold-press extra virgin
  • 2 cups white onions organic, diced
  • 1 red bell pepper organic, chopped
  • 3 gloves garlic organic, minced
  • 1 tsp Italian seasoning
  • 2/3 cup water
  • 2 cups raw spinach organic, chopped
  • 1 cup navy beans organic, drained
  • 1 can chicken broth organic, low-sodium
  • 1 cup whole tomatoes organic
  • 1 cup artichoke hearts organic
  • 250-300 grams tortellini

Instructions
 

  • Heat the oil in a soup pot over medium-high heat.
  • Add the onions, bell pepper, garlic, and Italian seasoning to the pot.
  • Add the water, spinach, beans, broth, tomatoes, and artichokes to the pot. Raise the heat to high and bring to a boil.
  • Lower the heat and simmer for 2 minutes.
  • Add the tortellini to the pot and cook until thoroughly heated, about 7 minutes.
  • Enjoy!
