Updated: March 31, 2023

Kale chips

We all have those moments when those salty potato chips look oh-so-tempting and weakness starts to take over. I’ll admit that I’ve given in to those moments multiple times, until recently.

Who knew kale would be the answer?! Kale is filled with powerful antioxidants and is high in vitamin A, vitamin C and calcium making it a healthy and satisfying alternative.

These delicious kale chips will help satisfy your snack cravings, and have the added benefit of filling your body with the fibre and micronutrients it needs.

Try them for your next movie night!

Ingredients

  • 1 bunch kale (we used curly kale, shown above. However, you can use lacinato, or redbor kale as well)
  • 2 tbsp olive oil extra virgin
  • 1/2 lemon squeezed
  • salt and pepper to taste

Instructions

  • Preheat your oven to 375 degrees F.
  • Thoroughly rinse and dry kale.
  • Cut the stems off the kale.
  • Chopp into large, chip-sized pieces.
  • Put into a bowl and toss with extra virgin olive oil, freshly squeezed lemon, other spices of your choosing and salt and pepper.
  • Place on a tray and bake for 15 minutes.
  • Take out and flip the kale chips to bake the other side. (*Check on the kale often when baking so it doesn't burn. Every oven is different and yours could be done sooner!).
  • Bake for another 10 minutes or until crisp.
  • Take out and let cool. ENJOY!

Notes

Additional: get creative and add different spices like cumin or red pepper flakes. For vegans- nutritional yeast is a good cheese substitute

    Hi Monica,
Love those crispy, crunchy kale chips! My recipe is similar to yours, but I do add the nutritional yeast and a big spoonful of tahini as well. Sometimes I use tamari instead of salt and don’t measure the lemon – just keep adding to taste. So good!

I have bought them from a store for $7:00 a bag. So expensive.

I decided to make them. It was a long time ago. They were good. But am anxious to try this recipe. Thankyou

    Hi Mary!

The picture shows the variation using nutritional yeast! This is a (vegan-friendly) cheese substitute that can be sprinkled on top of the chips 🙂 Feel free to give it a try and let us know what you think!

I have made kale chips before and love them. My kale is blooming and shooting up so is it too old to make chips? I think it is not tender enough for cooked kale dishes. What about chips, anyone?

    Hi Claire!

These should work just fine for kale chips. You can also try massaging the kale leaves for a few minutes to soften them up. 🙂

Let us know how it turns out!
